We thinks Madam Blueberry has created her first Vegan Cookie ~ butterless, eggless ~ We are still working on the flours to use but this is the first success and not bad, I might add, not bad at all:
Madam B's Vegan Cookies
2 cups Unbleached Flour
1/2 Cup Wheat Flour
1/2 Cup Oatmeal
1 cup of Applesauce
1/2 Brown Sugar
1/2 White Sugar
4 1/2 tsps Baking Soda
1/4 tsp Salt
4 TBSPs Water
1 tsp vanilla
1/2 cup raisins
(We used organic sugar, but know we can't afford that for the long haul of cooking. Need to work on our budget for that change!)
Mix the wet stuff. Then add the dry stuff.
Oven Temperature was 350 and then check them in 9 minutes. We thought ours were done.
They are a lovely little cake like cookie. It's a cookie you can do a lot of things with as far as what you might add for the next time, such as dried cranberries, or pecans (that might be really good), or even the infamous chocolate chips that finds it's way into everything sooner or later for me.
